Once a year Caol Ila runs an unpeated spirit, and it rarely escapes a blend. Little Brown Dog considered a sherry finish, then deliberately did the opposite: a distillate-forward bottling with nothing in the way, so you can actually learn what unpeated Caol Ila tastes like.

A wonderfully high cutting point makes for something elegant, sweet and delicate. The casks were expensive because the spirit is rare, but the point is the experience — a chance to add unpeated Caol Ila to your palate memory bank.
