This is the original Cap Corse Mattei Rouge aperitif wine, enojyed for generations by visitors and residents of the Island of Corsica. Its base is of mistelles of the island's most famous white grape, lending a terrific minerality and acidity. After macerating with a variety of exotic spices and herbs, the wine is aged for several months in large casks. As a quinquina, the cinchona bark (quinine) adds depth in the back palate. Traditionally served neat or on ice with a splash of soda. Also wonderful in numerous classic cocktails.
