Grown mostly in the area around Bethlehem and Hebron in Palestinian territories, the vineyards are located at 2600 ft of altitude. This cooler micro-climate ensures longer hang-times, more controlled ripening and an overall better structure of acids/sugars in the grapes.
Apricot, peach and pineapple on the nose, with hints of wet stone. Sour green apple leads into herbal perfume and white melon on the palate, finishing with zingy lemon and lime. No oak. Solid minerality throughout the light body. Clean, crisp and dry to finish.
