A vineyard selection of Tsolikouri made by the young woman winemaker Baia Abuladze. This is the only white wine in Baia's formula currently fermented in qvevri. The west of Georgia in general is much more humid and so the indigenous varieties all tend to have higher acidity to survive the climate. Tsolikouri is the most planted in Imereti and so too with Baia. All the fruit is estate grown in form one vineyard in the village of Obcha, hand picked and hand sorted. After destemming the wine is pressed and put into qvevri with partial skins and fermentation starts spontaneously.
