50% Carignan and 50% Syrah
Only the most perfect grapes are hand selected for this wine and only a maximum of 5000 bottles a year are made.
The grapes dry in air Amarone style in controlled conditions for two weeks until they lose about 40%of their water. Then they are destemmed and transferred to a tank at 5 degrees for maceration for about 2 weeks. After that the temperature is increased to start fermentation which continues for a minimum of one month. The wine is transferred to second generation French oak barrels for 6-12 months, then bottled. It remains in the bottles for a minimum of 2 years before release.
